Suggested Recipe: ‘Tandoori Chicken’
2 kgs (8-10) chicken quarters, with 2 deep slits in each piece
200-300 g natural yogurt, whipped
120 mls lemon juice or vinegar
75 g ghee or butter or oil
1 packet Balsara’s Tandoori BBQ mix (less for a milder flavour)
• Mix all the ingredients and coat the chicken pieces. Marinade in a refrigerator for a few hours, discarding any liquid collected.
• Arrange the chicken pieces on a baking tray and place in a pre-heated oven, gas mark 5/ 190C for 45 minutes. Then brown the pieces under a high grill or BBQ until tender and brown on all sides.
• Serve with a fresh green salad, onion, tomatoes and wedges of lemon.
