Tandoori masala is an Indian spice mix consisting of a variety of spices, including cumin, coriander, and turmeric. A tandoor is a type of clay oven first used in India that allows for high-heat cooking. Masala means “seasoning” in Hindi, one of the main languages spoken in India. Tandoori masala is used to flavor many Indian dishes.

You can make this spicy mix ahead of time and store it in an airtight container. Creating a tasty meal will then be a simple matter of marinating and grilling your dish.

Ingredients
100 grams cumin seeds
35 grams coriander seeds
20 grams cloves
5 cinnamon sticks (2 inches each)
20 grams ginger powder
20 grams garlic powder
20 grams red chili powder
20 grams​ turmeric
20 grams mace
20 grams salt
Optional: 1 teaspoon orange food coloring

The tandoori masala is an important blend of spices used in many Indian dishes.  It gives a spicy, smoky and aromatic flavour to your food.  It can be bought at most grocery stores down the spice aisle or ethnic foods aisle, though I prefer to make my own blend – it’s incredibly easy to make and requires only a few simple ingredients.  If you’ve seen my Guide to Indian Spices post, you’ll already be familiar with the spices in the following recipe. Most of these spices will already be on your spice rack or in your cupboard.

Tandoori masala’s ingredients have always varied from cook to cook or from brand to brand when using commercial premixed blends, but most are built on a foundation of the spices used to make garam masala. Those spices include cumin, coriander, and fennel. Garlic and ground Kashmiri chili pepper are among the ingredients often added to garam masala when making tandoori masala. Most versions have a pungent, complex flavor due to the variety of aromatic and sweet spices they contain. Also, most blends have a strong garlic note.
